Brief History and Knowledge of Bacon

 As we entered Spring last month, the weather is getting warmer above 10 Celsius for April. (AccuWeather, 2021). Occasionally I can smell the BBQ aroma from a distant neighbour's backyard grill. It reminds me of the summertime homemade Hamburg with this delicious crispy, salty, and savory bacon. This salted pork belly first appeared thousand years ago in China, where they were curing pork bellies with salt in 1500 B.C. Romans and Greeks inspired the curing method. (Scout, 2019). In 21st Century, the top two countries that export bacon are the United States and Canada. The U.S. has the export percentage at 28.72%, whereas Canada has 21.62%.  In Canada, Manitoba processes most of the bacon and is shipped to more than 30 countries globally. (Winnipeg & -, 2015) It is very convenient to buy fresh bacon here in Canada; we also have many selections and brands (over 50s).
